Valentin MORICE
Valentin Morice, who grew up in the Dominican Republic, left to train as a chef at the Lycée Hôtelier Les Sorbets, in La Roche-sur-Yon (Vendée). "Originally, I wanted to work in all the big Parisian restaurants. But when I arrived at the Plaza Athénée, I didn't like it. I didn't like the pace of life in Paris and the atmosphere of the big brigades", he explains. BEP and bac pro in his pocket, he joined the Domaine de la Bretesche, in Missillac (Loire-Atlantique), where he met Emmanuelle Gautier, then maître d'hôtel.
Three and a half years later, he followed her to the Château du Boisniard, where he took up the position of pastry chef. Six months after his arrival, owner Louisiane Mousset offered him the position of chef. "I wasn't even 22!" So, since 2015, Valentin Morice has been officiating at La Table du Boisniard, crowned with 2 belles toques in 2023, to which Le Bistro du Boisniard has recently been added. "I had decided to limit the number of seats in the restaurant, as a guarantee of quality. With Le Bistro, local customers who can't necessarily afford a gourmet meal can also come in. The aim is to offer good food at low prices."
