Théo Lebert is only 23, but he's already running his restaurant with his two partners. He was even awarded the Gault&Millau Jeune Talent Service en Salle trophy in October 2022. Born in 1998, this native of Normandy always knew he wanted to become a sommelier. "A family friend introduced me to the world of wine when I was young," he recalls.

It was in Rouen that he decided to gain his first experience in the dining room, at the bistronomic restaurant Le P'tit Zinc. Six months later, he joined the team at Origine, place Cauchoise, but didn't quite fit in. "The Michelin-starred world wasn't for me," he confides.

His place was at Rouen's Le Saint-Hilaire restaurant, with chef Thomas Lemelle. In 2019, Lemelle invited his seconds to take over the restaurant. That's how Ikat, which means "to tie" in Indonesian, came into being. Théo Lebert in the dining room, Perrine Campan in the pastry shop and George Widjaja in the kitchen share the running of the restaurant. " We knew the place and the clientele. Thomas Lemelle was there with us, which was reassuring," says Théo Lebert.
