While some people sometimes enter the restaurant industry by default or out of frustration, it has always seemed like a natural fit for Stéphanie Amy, an energetic young woman and highly professional maître d’ at L’Angle Saint-Laurent, the restaurant she bought with Luc, her chef husband. “I completed my apprenticeship in Caen, ” the young woman recalls, “but it was undoubtedly my time at the Hôtel de France in Vire that truly convinced me.” This very positive experience encouraged her to join the Salons du Pré Catelan in Paris, where she worked in events and catering, as well as at the Pré Catelan restaurant : “Whenever possible, I took on extra shifts within the group; I didn’t get much sleep, but I was passionate about it and learned a lot.”
In Paris, life moves at breakneck speed
Luc, her partner, was working at Ledoyen with chef Yannick Alléno and later at Thomas Boullault’s L’Arôme. Life in Paris was intense and exciting, but the young chef wanted to return to his native region, Normandy. “Luc had worked at L’Angle Saint-Laurent when he was in vocational school. He’d always told me that one day he’d buy that restaurant, ” explains Stéphanie Amy. “We left Paris for Bayeux; Luc worked as the chef’s sous chef for a few years, and we finally had the opportunity to buy the business in 2024. We chose to limit the number of employees—there are only two of us in the dining room—but that’s enough for the number of seats we offer.”
