Simon PERU
"I becameinterested in catering at a very early age, from primary school onwards, and started devoting myself to it when I was 15," explains Simon Peru. After a Bac Pro in Orchies (Nord) and a BTS in Montargis (Loiret), he left to do a mention complémentaire in sommellerie in his home region, Nord,"with Éric Dugardin, my first real trainer", he adds.
In 2019, he moves to Brussels to become a sommelier at La Villa Lorraine. "There were1,200 wine references there, so I was able to really deepen my knowledge and recognize good bottles," explains Simon Peru.
Since 2022, Simon Peru has been head sommelier at the Rouge Barre in Lille. He works alongside Steven Ramon, a candidate in "Top Chef" 2014. "He's a chef I'm passionate about, and I love working with him."To reward him, Gault&Millau awarded him the Sommelier trophy for the Hauts-de-France region that same year. "It's an honor to be able to represent the region where I was born, and to be able to promote sommellerie," says Simon.
