Chef : 1 restaurantSarah Chougnet-Strudel began by studying law and philosophy. "I realized that it wasn't for me. What I liked was making dinners and cakes," she explains. She then entered the Ferrandi school and worked at La Table du Lancaster (Paris), Le Gabriel (Bordeaux), then Pascal Barbot's restaurant, L'Astrance (Paris).
After three months at the SaQuaNa pastry shop in Honfleur, she obtained her visa and flew to Singapore. "I had an opportunity through Ferrandi to take part in a partnership with a school there. It was a great offer, I wanted to travel, I participated and I gave classes", she details.
In 2016, Sarah returned to Pascade in Paris, as second chef to Alexandre Bourdas. A few months later, Sarah headed to London to become demi-chef de partie at La Dame de Pic. She then moved on to Hélène Darroze's The Connaught, before returning to France, to the George V.
In 2019, the young woman has the opportunity to return to England, this time to The Greenhouse, then as chef at Le Antidote. Eight months later, she returned to Paris as head chef at Les Résidents and, in 2021, opened Regain in Marseille. "It was an idea I'd had since Ferrandi," she confides. Just one year after opening, Gault&Millau awarded her the Jeune Talent PACA Gault&Millau 2022, 1 toque, and selected her for the book 109 - Le Sang neuf de la gastronomie française...
