Nothing suggested that this native of Nice would end up settling in the Meuse department. Yet it was in Verdun—her partner’s hometown—that Romane Amadori chose to open her own pastry shop.

Training in Nice

“I went to culinary school in Nice,” she recalls. There, she earned a BTS with a concentration in cooking, followed by a CAP in pastry arts. She continued her training in Paris under MOF Laurent Duchêne, who runs several pastry shops in the capital.

At Laurent Duchêne’s, Béranger Gosset was in charge of training her. “It wasn’t love at first sight between us, ” she says with a laugh. “Béranger was, in a way, my boss; our relationship wasn’t very cordial at first. But then we got to know each other.”

A Project Designed for Verdun

The couple opened Bouche-Bée in 2023. Nothing was left to chance. “We thoroughly researched the local market before setting up shop, ” explains Romane Amadori. “Opening a bakery was out of the question, since the local market was already saturated. We aim to stand out—our pastries are very popular—and we’re now branching out into chocolate, a field in which Béranger has developed strong expertise.”

In addition to the classics, the shop offers original cakes. The “Fiora des bois” combines an almond dacquoise, whipped cream, and red berries. The “Cèlina” features a shortbread with red berries and fresh mint cream.
