Chef : 1 restaurantRémi Vanoverschelde and Sophie Coulombel are two true cooking enthusiasts. Vanoverscheldel, a keen cook and baker from an early age, joined Christophe Moret's brigade at Lasserre when he was just 15. He spent three years there as an apprentice, before finishing runner-up in the Best Apprentice of France competition. He went on to perfect his culinary skills with Christophe Moret (where he met his future partner), Pascal Barbot at L'Astrance, and then moved to Alsace after being recruited by Olivier Nasti to run the latter's bakery, Levain .
She, who was born in Brittany and will turn 30 at the end of 2024, trained as a pastry chef at Ferrandi, before gaining experience in a number of top-notch establishments, including La Fontaine.La Fontaine aux Perles in Rennes, Roellinger and the Shangri-La Paris, before settling in as head pastry chef at Matthias Marc's Substance in Paris.
Now approaching their thirties, the two young men are ready to set up on their own. And they have chosen the Morbihan region and the village of Crac'h, not far from Auray, to open their tearoom-restaurant, simply named Maison Vanobel. "We chose to combine our surnames to create a sign-valise. It's a wink, but for us, it's above all a way of symbolizing the addition of our skills - cooking, pastry-making and baking," he says.The restaurant's decor is inspired by our travels abroad. "
