Patrick BERTRON
Patrick Bertron is a man of almost one house. He joined Bernard Loiseau in 1982, and hasn't left Saulieu since. His vocation was born on Sundays with his family, around the tasty dishes concocted by his mother.
He grew up in Brittany, and it was at the famous Lycée Hôtelier in Saint-Nazaire that he learned the basics of the trade, before joining Marc Tizon, one of Brittany's most prominent chefs at the time. Once he had completed his military service, Patrick was captivated by his time at the Palais restaurant, and had only one idea in mind: to continue his training in the finest establishments. He sent out a multitude of CVs, like so many bottles to the sea. Only Bernard Loiseau gave him a favorable response.
Patrick was just 20 when he joined one of the restaurants that the whole world wanted to discover. He was only going to work there for a few seasons, but fascinated by the energy and passion of the man who would twice be named our Chef of the Year, he decided to stay.
When Bernard Loiseau passed away in 2003, his wife Dominique wanted to preserve her husband's legacy. Patrick Bertron was the ideal choice. Without resorting to museum cuisine, retaining the master's dishes while gradually adding his own, he has succeeded in maintaining this house among the finest in France, along a path that, like Bocuse or La Pyramide, is never easy to follow.
In September 2023, after more than 40 years at Saulieu, Patrick Bertron announces his retirement. Nevertheless, he will continue to act as an ambassador for this house to which he is viscerally attached.
