Chef : 1 restaurant Our winner of the Trophée Tradition d'Aujourd'hui 2024, Mickaël Landaud, is the embodiment of "bien-recevoir" in Berry, at the helm of Le Beauvoir in Bourges.Mickaël Landaud is viscerally attached to the Berry regionwhere he was born, grew up and settled with his wife. As a child, he lived inSaint-Doulchard, a small commune north of Bourges, now an integral part of the Berry conurbation.
"I didn't grow up in a family of restaurateurs, but I've always loved toeat, he recalls. My grandparents wereexcellent cooks, as wasmy mother . Iloved discovering new products and recipes, and I think Ialways wanted to become a chef."
A fruitful experience at La Tour restaurant
Once he had passed his "brevet des collèges", Mickaël Landaud enrolled at the Bourges Hotel School. It was the job of cook that interested him, ashe wasn't particularly attracted topastry-making - "That job had less media coverage than it doestoday.The young man completed a series of summer internships and, once he had obtained his "bac pro", he joined the kitchens of La Tour in Sancerre, as a commis. At that time, in the early 2000s, Daniel Fournier, Baptiste's father and future Grand de Demain 2011 Gault&Millau winner, was still in charge. "It wasalready a fine establishment, offering classic cuisine based on fine produce. I'mlearning a lot, and this approach to cooking appeals to me."
Buying Le Beauvoir from his parents-in-law
In 2005, the young man emerged as chef de partie, and joined the kitchens of Le Beauvoir, in Bourges. "Originally a hardware store, Laurence and Didier Guyot transformed it into a restaurant in 1991. It was an address with a fine reputation, where Imet Annie, the owners' daughter, who was to become my wife."
In 2018, the young couple officially took over the reins of the establishment after Annie's parents retired. " We had renovated the restaurant before the Covid, and then a terrible fire at the end of 2021, dealt us a big blow to morale. It was obviously avery difficult time for us, but we held on,thanks to thesupport of family, friends and our best customers .This Tradition d'Aujourd'hui trophyawarded by the Guide Jaune in 2024 nowrewards all our efforts."
