Michel TRUCHON
"Theessential is always threatened by the insignificant."This quotation from René Char is one of Michel Truchon's favorites; the chef even displays it in his restaurant, Le Sénéchal, in Sauveterre-de-Rouergue (Aveyron). Although he doesn't need it, the phrase reminds him of the value of humility and simplicity. "You know, I have a very ordinary background. I wasn't destined to become a chef, but I took over the restaurant when my mother died," he says.
Michel Truchon was born in 1951 in the Ardennes and grew up surrounded by the smells of his mother's kitchen. After attending hotel management school in Grenoble, he joined the Hôtel Lutetia in Paris as a commis,"but the big brigades didn't suit me". After his military service in Toulouse, he worked in various establishments and wintered in the Alps.
Then, at the age of 25, he was forced to take over the family inn, which he transformed over time into an authentic, quality restaurant - quite a gamble in a village of 300 souls. But it proved to be a wise choice, allowing Michel Truchon and his wife Chantal to exploit their art to the full. Gault&Millau have been awarding them a 15/20 rating for many years. This consistency will be rewarded in 2022 with the Techniques d'Excellence Occitanie trophy. "It confirms my ideas, and shows that we haven't gone down the wrong path," confides the chef.
