Chef : 1 restaurant In Marseille, M Rencontre, Mathieu Bourdoiseau turns his passion into success, combining self-taught skills and creativity, supported by the Gault&Millau Jeunes Talents Endowment.

A self-taught cook and former school teacher, Mathieu Bourdoiseau has followed a unique path. "In 2019, I was living with a flatmate in Paris... a friend signed me up for Objectif Top Chef, mainly as a joke. But I was hooked," he says. After graduating with a baccalaureate in maths, a master's degree in psychology and three years teaching autistic children, he decided to leave the French education system to devote himself to cooking.

Without a CAP, he joined Dessance in 2020 and became a private chef before joining Michel Kayser at the Alexandre restaurant in Garons, where he describes"a summer that was as difficult as it was formative". He continued in Paris with Victor Mercier, Top Chef 2018 finalist and creator of FIEF, before taking up the position of chef and manager at Arco, restaurant at the Maison des Ambassadeurs in La Rochelle.

An adventure as a couple and abroad

In 2025, with his partner Manon Dubois, he spent six months backpacking in South America, nurturing his culinary creativity. Back in Marseille, they learned that Julien Diaz's Saisons was up for sale. "It wasn't quite in our budget, but the opportunity was too good to pass up," he explains.

M Rencontre: success and ambition

In February 2025, the couple opened M Rencontre, near Place de la Castellane. "We're already on the verge of our third toque, which is an excellent start," enthuses Mathieu Bourdoiseau. Winner of the Gault&Millau Jeunes Talents award, he is already setting his sights high, ready to make M Rencontre one of Marseille's must-visit addresses, combining passion, audacity and culinary mastery.
