Margot SERVOISIER
Pastry Chef : 1 restaurant Barely 30, Margot Servoisier runs Le Colibri, a restaurant in Amiens, and Les Gâteaux de Margot, an address that gives pastry-making a whole new meaning."On Sundays with the family, we always bought cakes," recounts Margot Servoisier, who began making the family pastries herself at the age of 12. After studying finance, she headed to the Ferrandi school in 2015. There, she took a work-study CAP in pastry-making with Sébastien Gaudard, in Paris: "it was perfect for learning all the basics of French pastry-making in the best way".
In 2016, she worked as a commis at the Hôtel Barrière in Lille, before returning to Paris the following year. She then undertook a mention complémentaire at the Hôtel Raphaël. In 2018, she returned to Amiens and began training as a baker. But the young woman soon realized that this field was not for her. In 2019, she returned to her first love, taking up a job as a pastry chef at La Grange de Belle Église, in order to finance her current boutique project: "I've always wanted to open something."
In October 2019, Margot Servoisier, who has always been very interested in nutrition, opens Les Gâteaux de Margot. There, she will offer an organic menu, without colorants or glucose syrup, using mainly French and natural products. "I had to create pastries that held together, with nothing to hold them". And the pastry chef doesn't stop there, as in November 2022 Le Colibri opens in parallel: "It's the savoury side of what I do in sweet. " A more enticing promise than ever, earning her the Pâtissière Hauts-de-France 2023 trophy.
