Manon LIÉTARD
Passionate about Mexican gastronomy, chef Manon Liétard now runs her Beatriz restaurant in Lille.Before becoming the head chef at Lille restaurant Beatriz, Manon Liétard was an art student, studying for a degree in art, culture, anthropology and ethnology. "In the summer, I worked in a food truck serving Mexican street food. It was only for a season, but I ended up managing the company." She then abandoned her studies to concentrate on the El Camión project until 2019, when she left on a trip to Asia and Oceania to prepare the next stage of the adventure. " Her goal: to restore the Mexican taco to its former glory.
On his return, the opportunity presented itself: the team at the Friche Gourmande, near Lille, offered him his own stand at the Grand Scène, the temple of street food. That's how La Güerita ("blondinette", in Mexican slang) opened in July 2020. But her dream of having her own establishment persists. "I was aiming for this final project that I had imagined during my trip, something qualitative and refined to go against everything people think of Mexican cuisine." And so, since February 2023, Manon Liétard has been officiating at Beatriz. In this restaurant in Lille, named after Beatriz Adriana, the great Mexican singer, she introduces diners to the country's real cuisine, far from preconceptions.
