Ludivine PINEAU
At the helm of the chic Table di Mà, just a few minutes from Calvi, Vincent Champ and Ludivine Pineau offer a magnificent seafront stopover crowned with 3 toques.After two apprenticeships in Paris, at L'Ardoise Gourmande and Le Boeuf sur le Toit, Ludivine Pineau joined the Shangri-La Palace in 2016. "It opened the doors to the world of palaces, which I didn't know at all," she explains. A year and a half later, she landed a position at the George V, but decided to leave everything a few months after her arrival. "I'd had enough of Paris, so I left on a whim," she confides .
She headed south to the Grand-Hôtel du Cap-Ferrat, where she began her new life as a seasonal employee. The following winter, she joined the brigade at the Kintessence in Courchevel. "It was magical!" At the end of the season, she landed the position of demi-chef de partie with Yoann Conte, in Annecy ."They taught me a lot; it was hard, intense, but very rewarding. "
After another winter season in Courchevel, the young chef moved to Corsica, to La Villa Calvi. She returned the following year to join her partner, Vincent Champ, at Casa di Mà. Since the summer of 2022, the couple have taken over the reins of La Table di Mà, he as chef, she as assistant chef. Gault&Millau immediately awarded 3 toques to what it considered the best table in Haute-Corse. In winter, the duo return to Courchevel. "We have a very enriching lifestyle. We work with products from each region, so it's always different. We really have the best of both worlds," enthuses Ludivine Pineau.
