Laurent AUDIOT
After a gastronomic adventure with Gérard Depardieu, chef Laurent Audiot returned to Marius et Janette, a classic Parisian brasserie specializing in seafood.A graduate of the Blois hotel school, Laurent Audiot was predestined for restaurant management, a field in which he specialized during his CAP and BEP studies. "One day, to earn a little money, I went into the kitchen. I liked it right away. I loved seafood, which I had learned to discover as a child when I spent my vacations in Finistère." Motivated, in 1988 he joined the team at Marius et Janette, in the8tharrondissement of Paris. He quickly progressed from chef de partie to chef. There he met Gérard Depardieu, with whom he struck up a close friendship.
In 2003, with Carole Bouquet, the gang opened La Fontaine Gaillon in the2ndarrondissement, followed in 2006 by an annex, L'Écaille de la Fontaine, specializing in seafood, particularly oysters, shellfish and crustaceans . "My passion since I was a child", explains Laurent Audiot. In 2006, he continued in this vein by opening Moby Dick, a fishmonger's shop on rue du Cherche-Midi.
In 2012, in front of the Arte cameras, Laurent Audiot shared his love of good produce with Gérard Depardieu during a gastronomic tour of Europe, for a three-part documentary series: À pleines dents! " I continued to manage our three establishments in parallel, but after thirteen years, I wanted to reconnect with my first culinary loves, at Marius et Janette. "
In 2016, the chef returned to the legendary Slavik decor, which evokes the overturned hull of a boat. Laurent Audiot feels like a fish in water .
