Laura PLESTIN
Chef de service : 1 restaurantBorn in Lyon in 1987, Laura Plestin grew up with a stay-at-home mother and a father working in the construction industry. "We moved around a lot during my childhood, as my father changed jobs. We were lucky enough to regularly frequent fine restaurants and I always enjoyed that, even if I was far from thinking I'd one day make a career out of it", she recounts.
The Yvelines, Aix-les-Bains, then Nîmes, where the family eventually settled. Laura Plestin became a ready-to-wear saleswoman in the Gardoise capital. It was during this time that she met her future husband, Loïc, whom she followed to Paris, where he held several managerial positions.
"In Paris, I stayed in sales until I became manager of several stores for a famous shoemaker. But in 2019, we decided to move to the South, where my husband is from. I pushed him to open his first restaurant, even though I knew I'd have to jump in as a restaurant manager with no experience whatsoever. I had a waiter by my side at first, and now I've been on my own for a few seasons."
Today, customers praise her naturalness and her ability to manage thirty or so covers on her own, while keeping time for everyone. "I think customers appreciate that I take the time to talk to them. In 2024, Gault&Millau awarded her the Jeune Talent en Salle trophy for the PACA region.
A sommelier novice when she opened La Loge Bertin, Laura Plestin has gradually built up a solid palate and wine culture. "I chose to focus on Rhône Valley wines, out of personal taste. But this cellar is constantly evolving."
