In the Sundgau, a region steeped in Alsatian tradition, a young Thai chef is making a name for himself. His friends and family call him “Fem.” Born in Nong Khai province, on the border with Laos, Kotphan Theerawat trained in Bangkok at one of the country’s finest restaurants, R-Haan. He stayed there for ten years before moving to Alsace.
The Call of the Klanklong Brothers
There, he reunited with his compatriots Chatchai and Kriangkai Klanklong, founders of L’Orchidée. In April 2025, the two brothers opened their three-toque restaurant in Ensisheim. They welcomed Kotphan Theerawat into the kitchen for a few months, then entrusted him with Yim, the new restaurant that opened in place of the former L’Orchidée in Altkirch.
Fresh herbs, chili peppers, and spicy sauces: his cuisine breaks from local traditions. His signature dish, Tom Yam Kung, is reimagined in a gourmet style. Coconut, lemongrass, and a hint of orange balance the acidity, heat, saltiness, and a touch of sweetness, served with seasonal vegetables on the side. In the dining room, Daniel Valladares oversees service. Yim received a score of 13/20 and two toques.
