For those who didn't take " Breton " as their third language, Ac'Hann, the name chosen by Josselin Le Diffon and his partner Eva Lotrous, simply means " from here ". This is the authentic, sometimes rugged Brittany that this well-trained young chef loves. "I always told my parents I wanted to be a chef. I went through the classic route, hotel school in Lannion, professional bac, without going on to BTS. I wanted to get out into the world of work quickly.
From Perros-Guirec to La Butte, working with the best
He started out working with Thierry Martin, creator of Pesked in Saint-Brieuc, in his briochins establishments, before joining Agapa in Perros-Guirec, where he worked with the best. Perros-Guirec, where he assisted Cédric Dominguez and then his successor Jean-Alexandre Ouaratta, " two excellent chefs with a high technical level ". In 2022, he left the shores of the English Channel to join Nicolas and Solène Conraux in Plouider. He stayed at La Butte for two years, where he met his future partner Eva Lotrous. "Eva was working at the spa at the time. She loved her job, but being cooped up for long days got on her nerves. And I was convinced that she would make an excellent room manager.
Ac'Hann, an instant success in Brest
The couple struck up a friendship with Guillaume Dubois, who runs two restaurants in Brest, Globulle Rouge and Satyr. In 2024, both establishments were experiencing difficulties, and Josselin tried to help his friend turn things around, but to no avail. "Even though we initially wanted to take over Globulle Rouge with Eva, we finally realized that the setting was more pleasant at Satyr. After a month of hard work, helped by family and friends, we opened in October 2025. Success was immediate. Well-chosen local products, excellent value for money and a much-appreciated €35 menu: these days, it's often difficult to get a table at Ac'Hann without a reservation.
