Chef : 1 restaurant After many years behind the scenes, Jean-Claude Walter opened his first restaurant, Chez Gervais, at the age of 45.
Presentation

Jean-Claude Walter is not one to let himself be idle. Alsatian by birth, he learned the basics of the trade at the Lycée Hôtelier in Thann, then at the Hotel-Restaurant La Verte Vallée in Munster, before joining Dominique Le Stanc's brigade at the Negresco in Nice.Dominique Le Stanc's brigade (at Le Negresco, Nice) is also a professional fisherman, which enables him to supply his restaurant with river fish.

In 2019, Jean-Claude Walter and his wife settle in a small village in the Doubs region of France.

After working for many years as Pierre Basso-Moro's second-in-command at Château de Germigney, it wasn't until the age of 45 that this hyperactive man opened his first restaurant, taking over Chez Gervais, the long-established family restaurant where Edgar Walter had been a chef.Gervais, a venerable family restaurant where Edgar Faure, president of the French National Assembly in the 1970s, used to dine.

"Of course, we had to do a lot of work to bring the place up to date, but today I'm satisfied with the result. What's more, my daughter Juliette has just joined me at the restaurant to take charge of the dining room. I'm both proud and delighted."
