Jean CHAUVEL
Born of Breton parents, Jean Chauvel is the 6th in the family. As he explains,"In my family, the first son is called Jean. My parents were restaurateurs, so I was born in the kitchen, and as a child I peeled potatoes and washed dishes. I loved that atmosphere, where people came and had fun."He was born a restaurateur. His parents ran brasseries in the Paris region.
Jean Chauvel cut his teeth at Fauchon, at La Tour d'Argent with Manuel Martinez, at Taillevent between 1990 and 1992, and spent a season in Saint-Tropez, where he met his wife Nelly, at La Pinède. "In1993, I met the Conticini brothers. I worked with Christian and Philippe for three years at La Table d'Anvers, which was an incredible learning experience."After a brief stint at the Crillon, he finally set up on his own.
For over sixteen years, he ran his own restaurant, Les Magnolias, in Le Perreux-sur-Marne, which won 1 toque in its first season, 2 toques three years later and even 3 toques in 2008, with Gault&Millau describing it in 2014 as "one of the most exciting 3-toques in France".
But Jean Chauvel had only one idea in mind: to take over the Le Métro brasserie in Boulogne-Billancourt, where his parents had worked more than forty years earlier. His wish came true in 2016. The place combines a beautiful corner brasserie, 3B Brasserie, and the gourmet restaurant Jean Chauvel, which won 2 toques in its first season.
