Jaïs MIMOUN
Chef : 1 restaurantThe Mimouns are born restaurateurs; both parents and children are in the business. "My father and mother have a restaurant called Le Tagine in Paris. I spent every weekend in the kitchen," recalls Jaïs Mimoun. After an initial apprenticeship with Rodolphe Paquin, at Repaire de Cartouche (Paris 11th), he moved to the kitchens of Le Bristol, led by Éric Frechon, where he landed his first job in 2007. "It was very formative. I worked for a year in the gastro department, then two and a half years in the banquet department with Philippe Lefranc, a very great chef."
After four years at the palace, Jaïs Mimoun took up his first position as chef at the bistro Au Petit Tonneau (Paris 7th). "Two years later, he embarked on a new adventure: opening his first restaurant, Le Petit Célestin, in Paris 4th, with his brother Yanice. "It's just like us: a bistro feel, with carefully-crafted plates and a very nice open menu."
In 2016, a second establishment, Jaïs, saw the light of day on rue Surcouf (Paris 7th). "We had a great opportunity. And we wanted the dishes to be more advanced and for me to have more fun in the kitchen, especially with the produce." Over there, not two but three brothers work side by side: Jaïs in the kitchen, Yanice and Samy in the dining room. A winning trio who plan to open a third address in Saint-Tropez next year. Gault&Millau quickly awarded them a 13/20 (2 toques) rating.
