Émeline MACÉ
Head sommelier : 1 restaurantÉmeline Macé's career path is as atypical as it is rich in experience. It began with an engineering diploma in catering from Esthua in Angers. It was during this period, when she was working as a home chef, that she discovered the world of wine, including natural wine. "I had the opportunity to enter some incredible private cellars."During her studies, Émeline also discovered the world of culinary consulting, specializing in desserts for chefs and food brands alike. She also completed an internship at L'Atelier des Chefs in Paris, and later became manager of the Saint-Lazare workshop.
From 2011 to 2017, she developed new product ranges for KFC France and then Domino's. Then she realized her dream: to do a master's degree at the International Organization of Vine and Wine. TheOIV is like the UN, but with 48 member states that govern the world of wine," she explains. I spent eleven months traveling the world, meeting professionals and visiting 27 countries. It gave me a global vision of the world of wine."
From this experience, she and her partner Alan Floc'h founded Rewined, "a lively space for drinking and eating organic, biodynamic and natural wines right in the heart of the city of Rennes". A way for her to act as a messenger for the winemakers she meets. This desire to give meaning to taste was rewarded in 2022 with the Sommelier Gault&Millau Bretagne trophy.
