The story of Eileen Wallet (a name of Flemish origin) could no doubt inspire some screenwriter short of ideas. Born in the Paris suburbs at the end of the 90s, to a physics researcher father and a computer scientist mother, the young woman studied music at the Sorbonne, sang Boris Vian in a jazz band, and taught for several years at the Conservatoire d'Asnières as a piano and voice teacher.es at the Conservatoire d'Asnières as a piano and singing teacher in the " musiques actuelles " class, while also strumming (rather well) the bass in an angry punk trio called Acid Gras. "As I approached 35, I began to tire of teaching music. I love learning new things, and decided to make a radical change of direction by taking a CAP in floristry. My aim wasn't to open a classic boutique afterwards, but a place with multiple activities, around the floral business of course. In particular, I planned to work with restaurants.
From music to catering in Lorient
To train, Eileen worked at a florist in the 5ᵉ arrondissement, just across the street from Café Parisien, a brasserie that quickly became her canteen. "With Victor, the chef, the current quickly passed between us. He wanted to move to Brittany and open his own restaurant. Everything went very fast after that. The new couple identified Lorient as an ideal base. They both appreciate the energy of this port city and its diverse population. "We wanted to take our time before opening our restaurant. I trained myself, did extra work in several restaurants, and then we heard that the Paihia Kitchen was for sale. We liked the location and could afford it, so we didn't hesitate.
Chez Pipon, a restaurant driven by the duo 's energy
Chez Piponwelcomed its first customers in early December 2025. Victor Chaigneau, alone in the kitchen, and Eileen, alone in the dining room, are responsible for 35 covers at each service, with a boundless and communicative energy. "We've just hired someone to help me in the dining room as summer approaches," says Eileen. "I'm going to have to take a few weeks off soon...". The family will indeed be growing next fall...
