Presentation

Born in Paris in 1989, Edmond Gasser initially set his sights on psychology after a literary baccalaureate in 2007. But during his visits to preparatory schools, another path opened up for him. "At the same time, I discovered a hotel school and found it fascinating," he recalls. He took an upgrading course, followed by a BTS in tableware. Although he dreamed of cooking, it was at the training restaurant that he met the sommeliers and fell in love with their profession. "I found them fascinating. Franck Ramage, a leading figure in hotel education, encouragedhim and confirmed his vocation.

In 2011, he joined the George V as a commis sommelier, under the direction of Éric Briffard. An impressive first experience. This was followed by two years in Munich, before moving to Geneva to work at the Beau-Rivage with Vincent Debergé. In 2017, he landed his first position as head sommelier at the Mandarin Oriental's Indian restaurant. The following year, he returned to the Beau-Rivage, but this time in Lausanne, for Anne-Sophie Pic's restaurant. A decisive encounter.

The Pic adventure

Since 2020, Edmond Gasser has been based in Valence, in charge of sommellerie at the Pic group's parent company. "I have a great admiration for Anne-Sophie Pic, for what she does and what she inspires," he says, and oversees a fine team of six sommeliers at the gastronomic restaurant (4 toques), three at the André bistro (2 toques), and five bartenders.

He describes his career as a series of serendipitous events, guided by the right encounters: "It's a natural progression, based on a love affair. It's quite gratifying to be able to evolve while maintaining excellent links." He also pays tribute to Paz Levinson, executive head sommelier of the Pic group. "She has always supported me in all my adventures. We've been working together for eight years, and she makes this job inspiring."

Winner of the Gault&Millau Sommellerie award in Switzerland in 2020, Edmond Gasser has established himself as one of the most promising sommeliers of his generation.
