a dazzlingwinner of the Bocuse d'or 2021, Davy Tissot is, like all truly great chefs, a discreet and rather humble cook, reminding us at every opportunity that this trophy was a fine team effort. those of us who have followed himfor many years, from his position as chef at the Villa Florentine, which he held for some ten years, have come to appreciate his skill and professionalism. He alreadydominated Lyon's gastronomy, both literally and figuratively , and his rigor and perfectionism produced some of the most accomplished dishes. Joining the Institut Bocuse in 2016, he put his infinite knowledge at the service oftomorrow's talents, while refining the menu of the Saisons restaurant at theÉcullyschool. Trained by the greatest himself (Bocuse, Maximin, Jaloux, Marcon...), Meilleur Ouvrier de France 2004, he alone represents all the excellence of French cuisine .
