Nothing predestined Clio Modaffari for the culinary world, but once she was immersed in it, the Italian never stopped blossoming. Today, as chef at La Flibuste Martins restaurant in Villeneuve-Loubet, she reveals even more of herself in her collaboration with her partner, Anne Legrand.
Presentation

Before taking up cooking, Clio Modaffari studied languages and the protection of the marine environment. But an experience in Paris changed all that. The young woman joined the brigade at Gordon Ramsay's restaurant at the Trianon Palace Versailles. There, she met Anne Legrand, with no idea that they would become more than just a kitchen duo.

In 2011, she joined William Ledeuil at Ze Kitchen Galerie, where she rose to the position of executive chef. "Then, in 2014, she joined Anne at Itinéraires, working alongside Sylvain Sendra. A few months later, the Italian left for Le Frenchie, also in Paris. "I started in the restaurant, then went to the wine bar. It was great fun."

In 2015, she helped open Japanese chef Toshitaka Omiya's Alliance restaurant. Two years later, she and Anne lent a hand to a former colleague who had taken over her father's restaurant, La Belle Étoile, in Niort. That same year, Gault&Millau crowned the two young women Jeunes Talents 2018.

Then Clio Modaffari entered Fulgurances, in Paris, an establishment that hosts chefs in residence. "It was a great melting pot of cuisine!" In 2018, Clio joined Anne at the helm of L'Innocence restaurant in Paris, alongside their former colleague and friend, Jonathan Caron. A success: the chef duo wins the Grandes de Demain Hauts-de-France 2021 trophy.

Since 2023, the pair have been at the helm of the restaurant La Flibuste Martins, in Villeneuve-Loubet (Alpes-Maritimes). An experience that was supposed to be short-lived, but may well last forever! The tandem once again impressed Gault&Millau, who immediately awarded them 3 toques.
