Clément MARTIN
Winner of the Coupe de France des jeunes chocolatiers confiseurs, Clément Martin founded the Provence Raví ice cream brand in 2018, aged just 23."As far as I can remember, I've always wanted to work in pastry-making," says Clément Martin. At the age of 15, he naturally joined the Compagnons du devoir to complete his apprenticeship. With their help, the teenager obtained his CAP (vocational training certificate), then his bac professionnel (vocational baccalaureate) in baking and pastry-making, as well as a mention complémentaire (additional qualification) in pastry-making. At the same time, he trained with Frédéric Hawecker, MOF in Châteaurenard (Bouches-du-Rhône). Feeling his wings growing, the young enthusiast took part in competitions, winning the Coupe de France des jeunes chocolatiers confiseurs in 2014. Impressed, Frédéric Hawecker appointed him head chocolatier of his store: a good choice! At the age of 19, François Hollande presented Clément Martin with a Rabelais award for young gastronomic talent.
Boldly, he entered the Trophée Pascal Caffet, in Troyes, in 2016, and came away with third place. At the end of the year, Clément Martin followed his chef companion to Canada. In 2018, on his return to France, inspired perhaps by the particularly cold winters of North America, the young man decided to set up his own business: Les Glaces de Provence Raví. With his mother in charge of accounting, and his father in charge of marketing and development, the artisan opened his first shop in Lourmarin (France).The artisan will open his first store in Lourmarin (Vaucluse), then in Arles and Saint-Rémy-de-Provence in 2022, and finally in L'Isle-sur-la-Sorgue in 2023. "In the region, there are all the right products to make good ice creams. I quickly made friends with local producers, within a 20-kilometer radius, to push them out of their comfort zone."As a result, Clément Martin dares tasty pairings that have convinced hotels and delicatessens in the region to market his elegant pots, guaranteed without artificial coloring or flavoring.
