Clémence Specht ET FLORIAN GAT
Chef : 1 restaurantRipailles, the pretty gourmet table opened by Clémence Specht and Florian Gat in 2018, is first and foremost the story of a meeting between two wine and produce enthusiasts. Florian, who was born in Béziers but grew up on the shores of the Arcachon Basin, quickly developed a passion for sommellerie during his first months at the Lycée Hôtelier in Talence. " Wine has always interested me. I was lucky enough to work at La Guérinière, in Gujan-Mestras, then at the Ibarboure brothers' where I assisted the sommelier. It was a small team, so I had a lot of responsibility, and I learned a lot there.
It was in Bidart that Clémence Specht and Florian Gat met. Clémence was in the kitchen, having moved to the Basque country from her native Touraine after working at Mas du Langoustier on the island of Porquerolles. The two young people never left each other's side, joining forces at the Ar Men Du restaurant in Névez before taking over the Douceur de Vivre restaurant in Brest in 2018 .
"At the same time," explains Clémence,"I trained as a sommelier myself. Infact, we ran a small wine cellar in Brest for some time, while waiting to find the business that would enable us to set up shop" .
WithClémence in the kitchen and Florian in the dining room (although Florian cooks every morning right up to service time), the duo is well established and has created a highly sought-after meeting place for connoisseurs, just a stone's throw from the Halles Saint-Louis .
