Claire SONNET
Chef de service : 1 restaurant From a simple student job to a prestigious career, Claire Sonnet could never have imagined such a path in her early days. A rich path that led her to her current position as Restaurant Manager at Le Louis XV - Alain Ducasse at the Hôtel de Paris in Monaco.The daughter of a legal assistant and a chartered accountant, Claire Sonnet had no intention of entering the restaurant business. A student job changed the course of her career. "While I was studying psychology, I was also working in a brasserie in Versailles. It was my colleagues at the time who gave me a taste for the profession", she explains.
On completion of her bachelor's degree, the young woman went on to study for a CAP (vocational training certificate) in room service with Thierry Leluc at the Yacht Club de France, and went on to complete a bachelor's degree in catering management at the Ferrandi school. When she wasn't studying, she did internships and went on adventures, obtaining contracts in England and Spain.
On her return to Paris, she joined the Plaza Athénée, working alongside Denis Courtiade, with whom she had completed her end-of-studies internship. From head waitress, she progressed to account manager and then maître d'hôtel. After six years, she moved to the Hôtel de Crillon, where she worked with Christopher Hache as director of the L'Écrin gourmet restaurant.
In 2018, Claire Sonnet was offered a new opportunity: to take up the position of room manager at the Le Louis XV - Alain Ducasse restaurant at Monaco's Hôtel de Paris. "When I spoke with chef Alain Ducasse and the opportunity arose to work with him again, I didn't ask myself the question twice." She has been officiating there ever since, alongside chef Emmanuel Pilon and sommelier Maxime Pastor.
