Pastry Chef : 1 restaurant From the Trianon Palace in Versailles to La Flibuste Martins, in Villeneuve-Loubet (Alpes-Maritimes), Anne Legrand has never stopped growing and learning, and today offers a cuisine in symbiosis with her partner, Clio Modaffari.
Presentation

Raised by her grandmother, Anne Legrand grew up surrounded by a vegetable garden and good produce. "Over time,her passion grew," she explains. This love of cooking and nature first led her to an internship at Guy Savoy, where she discovered the world of gastronomy.

In 2010, she landed her first job at Gordon Ramsay's restaurant at the Trianon Palace Versailles. There, she met Clio Modaffari, with no idea that they would become more than just a kitchen duo. Two years later, from May to December 2012, she was promoted to chef de partie at the Hélène Darroze restaurant in Paris.

She continued her career in 2013 at the Itinéraires restaurant, working with Sylvain Sendra. "He was a great chef, I was able to touch magnificent products and I understood instinctive cooking. He's the one who gave me my first sous-chef position." Then off to Le Clarence, Paris, in 2015, alongside Christophe Pelé. " It was the experience that changed my vision of the profession."

Then, in 2017, Anne and Clio came to help one of their friends launch his restaurant La Belle Étoile, in Niort. It was there that they won the 2018 Gault&Millau Jeunes Talents trophy. Last stop: L'Innocence, in Paris, owned by Jonathan Caron, a former colleague from Atelier Rodier. Its success was confirmed by the Grandes de Demain Hauts-de-France 2021 trophy.

In 2023, the desire to leave Paris and move closer to the South pushed the chef duo towards the Italian border. It was at La Flibuste Martins, in Villeneuve-Loubet (Alpes-Maritimes), that they found their place, at least until their next adventures... Gault&Millau immediately rewarded them with 3 toques.
