Chef : 1 restaurantAlthough his passion for cooking goes back to his earliest childhood, Andreas Baehr says he was mainly influenced by his time with some of the great chefs who trained him. Born in Bourg-en-Bresse in 1987, the first fine table where our future Jeune Talent cut his teeth was Didier Goiffon's, whose Marelle was then located in Péronnas, on the outskirts of the Ain prefecture.
" I started as a clerk and worked my way up to second-in-command. I then decided to move to Brittany to join Patrick Jeffroy in Carantec. I stayed for two years in this beautiful house by the sea, in this rugged yet magnificent Finistère".
Always on the move, passionate about cooking competitions and constantly on the lookout for the best products, Andreas Baehr will receive the Gault&Millau Dotation for Young Talents in 2019. In the same year, he and his wife Estelle, a restaurant manager and passionate sommelier, opened Scratch in the heart of Bourg-en-Bresse. Word of mouth is excellent, the awards are piling up, and the couple are already thinking about the next step. " In 2024, we'll be leaving our current location to set up shop a little further away, still in the center of Bourg-en-Bresse, but in more spacious and comfortable premises. We can't wait," adds the ever-enthusiastic chef.
