Andrea HAREL
Andrea Harel studied at the Lycée Hôtelier in Saint-Chély-d'Apcher (Lozère), before completing a BTS in management and sommellerie in Toulouse. His sommelier commis internship at Le Pré Catelan in 2017 pushed him further in this direction. That's why he began a professional diploma in Toulouse, and completed his sommelier apprenticeship at the prestigious Peninsula in Paris. "I developed a real passion for wine there," he explains.
Andrea Harel was hired on completion of his apprenticeship in 2019, working alongside Florent Martin, France's Best Sommelier 2021. "A stint in a palace is super important; it's an international requirement with an ultra-luxury clientele, and that's where you learn the most about rigor," he says. However, the world of luxury is not what he aspires to:"I told myself I had to aim high, to have a solid base, and then do what I like in a more human-sized team".
In 2021, the sommelier joined the Mallory Gabsi restaurant in Paris, whose eponymous chef was made popular by the TV show "Top Chef". He takes on the position of head sommelier as well as room manager. "Opening this restaurant has been intense and gratifying; it's a bit like our baby."Proof of his professionalism, Andrea Harel was awarded the Jeune Talent Service en Salle Île-de-France 2023 trophy.
