Alexandre MARCHON
"Alexandre Marchon was imbued from childhood withthe idea of "eating well". His greed and curiosity could have led him into kitchens, but he went to business school first, before working in advertising.
In 2013, the call of his second vocation was too strong: "I wanted to do something with my own ten fingers." So he decided to launch a home chef service with the help of books, which he used to train over the months. Three years later, he was offered a position in the Parisian restaurant Caminito: "It was my first step into a professional kitchen, and it was as a chef!"With this experience in his pocket, Alexandre Marchon spent some time advising and supporting restaurateurs, before opening an ephemeral restaurant on the quays of the Seine in 2017: Pansoul.
Later, he helped open Le Polichinelle, a chain created by Steve Burgraff, where he signed the savory menu (Christophe Michalak, the sweet menu). In 2019, he decided to launch his own establishment, Marchon, inaugurated between the two confinements of 2020. From then on, the self-taught chef will be able to deploy his universe, through "a cuisine based on vegetables, land and sea, with a focus on sauces". A certain idea of the gourmet taste that has characterized him since childhood!
