Akashi KANEKO
Chef : 1 restaurant In the heart of downtown Bordeaux, Japanese chef Akashi Kaneko offers a delicate and singular cuisine."In the family, there has always been a love of French cuisine," says Akashi Kaneko. Born in Japan in 1978, he trained at the prestigious Tsuji Hotel School in Osaka.
His professional career began in a French restaurant in Japan, before the young man decided to move to France in 2005. He passed through Marlenheim (Le Cerf, with Michel Husser), Agen (with Éric Mariottat), Issoudun (La Cognette), before returning to his native country for two years. In 2008, Akashi Kaneko returned as sous-chef at Luc Salsedo in Nice .
In 2012, he took the plunge and moved to Bordeaux, on the outskirts of Mériadeck, before relocating in 2017 to the heart of the old town. The chef's cuisine is unmistakable: "I like to create original recipes, with good seasonal ingredients," he says, always taking great care over the presentation of each product. Proof of his talent, Gault&Millau awarded him the Cuisine de la Mer Nouvelle-Aquitaine 2019 trophy.
