Bruno VERJUS
Born in Roanne (Loire) in 1959, Bruno Verjus initially embarked on a medical career in Lyon (Rhône). He stopped at the master's level, preferring to fly to the United States, where he became an advertising photographer in Los Angeles, working for a company that manufactured information panels using light-emitting diodes. He then moved to China, where he became head of a medical equipment and packaging company. He remained there for 18 years.
Journalist and food blogger
In 2003, on his return to France, he took up the art of natural wine, and even ran the Château Yvonne estate near Saumur (Maine-et-Loire) for seven years. During this time, he developed his passion for cooking to the point of writing a " Food Intelligence " blog.
In 2010, he joined the editorial team of the magazine l'Omnivore and became a radio host on the"On ne parle pas la bouche pleine" program on France Culture with Alain Kruger. For five years, he frequents the best kitchens and shares his favorites.
Bruno Verjus' restaurant
His knowledge of the product, acquired in particular withAlain Passard, encouraged him to launch a neighborhood bistro offering "living cuisine". He uses the money from the sale of his medical business to get started and designs the venue, with the architectural firm Nem taking care of the rest.
Table opens on April 11, 2013, on rue de Prague, in the 12ᵉ arrondissement of Paris. The beginnings are difficult. at 54, unknown to the restaurant business and with no prior training, he serves 24 covers there almost single-handedly every day. It took him a year and a half to learn the trade of chef and restaurateur.
Today, the sixty-something with 3 toques is a leader in his field, reinventing himself daily according to the produce delivered directly to him by his 300 producers. There's no set menu here, but a number of flagship creations, such as the lobster-cru mi-cuit and the tarte chocolat câpres et caviar.
