From World Champion to Record Holder
After being named world champion in the praline tart category for 2025 at the Mondial de la Praline, Thomas Dura has become the leading authority on this iconic Lyon specialty. During the competition, he won over the jury with his praline tart, adorned with a rosette inspired by the stained-glass window of Lyon’s Saint-Jean Cathedral. Delicious, refined, and executed to perfection, his praline creation secured him the victory.
Today, he is preparing to take on a new challenge… a monumental one. And for good reason: the pastry chef will have to reproduce his signature design on a monumental tart measuring 4 meters in diameter. A feat combining artisanal skill and technical expertise—one that the pastry chef and chocolatier is eager to tackle: “When Jérémie Payan proposed this challenge to me, I was immediately captivated. Creating a giant praline tart is a bit of a crazy project, but it’s also a wonderful opportunity to share with the people of Lyon the specialty that helped me become world champion.”

A Challenge Fit for a Champion
As part of the fourth edition of Lyon’s Poussineau Festival, the world champion will attempt to break the regional record for the largest praline tart. The goal? To beat the current record held by Maison Vigier, which created a rectangular tart measuring 2.96 m by 0.72 m, yielding approximately 300 slices.
To celebrate this iconic Lyon specialty, a tart four meters in diameter will be created, yielding nearly 2,500 slices and using over 600 kg of ingredients. Its creation will involve assembling 152 separate components. The public is invited to watch the assembly beginning at 1:30 p.m. on Place de la Croix-Rousse, before the tart is officially unveiled and measured at 3:30 p.m. Once the record is certified, the pie will be sliced and sold for tasting at a price of €3.50 per slice. Evidence of the attempt will then be submitted to Guinness World Records, which has been notified in advance.
