Pierre Hermé signs a flaky autumn with the opening of a temporary boutique at Galeries Lafayette in Paris. What can you find there? And until when? Gault&Millau tells you all.

Crunchy, buttery, intense in flavor... Pierre Hermé gives a new dimension to viennoiserie. Since September 2, 2025, the pastry chef has taken over Galeries Lafayette Le Gourmet on Boulevard Haussmann in Paris, with an ephemeral boutique open for one month only. The aim: to offer gourmets a unique, "infinitely gourmet" experience.

A generous, creative menu

On the menu, classics are revisited with the boldness that characterizes the house. The Montebello croissant marries pistachio and raspberry, while the Infiniment vanille palm sublimates a crunchy texture. The must-have items are also on the menu: the Ispahan croissant, the kouign-amann, the apple turnover, the plain croissant or the chocolate and pistachio bread. Enough to seduce both lovers of tradition and explorers of new flavors.

To accompany these sweets, the company has devised a drinks menu specially designed for the occasion. "Matcha Cappuccino, Frappé Macaron Ispahan, Chocolat chaud Infiniment Chocolat, Latte Ispahan... and many other creations" invite you to prolong the experience. An opportunity to combine the art of the puff pastry with that of the drink, in the same quest for subtlety and balance.

A time-limited event

This ephemeral kiosk, installed until October 2, 2025, is open Monday to Saturday from 9:30 a.m. to 9:30 p.m., and Sunday from 11 a.m. to 8 p.m. A gourmet interlude in line with the company's strategy of innovation, already illustrated last April with the opening of the "Infiniment Chocolat" boutique on boulevard des Capucines.

One month, one address and unique creations: an invitation to take a bite out of Pierre Hermé's puff pastry universe, before it disappears from the shop windows.
