On January 20, the aptly-named Paris-Dakar arrives in Cordoba, capital of the province of the same name, nestled in Argentina. To celebrate the event, Gault&Millau contacted Carnar, a company specializing in Argentine meat.

Carnar has been in business for over 40 years.

Initially reserved for professionals, the company is now expanding its business to include private customers, who are discovering tasty meat from cattle that graze on vast pastures.

Argentinian meat is sold fresh and vacuum-packed, and the animals raised on the pampas offer a uniquely tasty meat that is well known to Latin and Parisian carnivores, as well as to professionals.

The house cooks famous dishes such as stuffed turnovers, chili con carne (the famous one), shepherd's pie with cream of corn (pastel de choclo), chicken with mole...


And what about the party?

Carnar organizes "asado parties" with grilled meats and musical entertainment at the customer's premises, with a team of gauchos disembarking equipped with cooking grills, possibly accompanied by musicians if requested... to create a distinctive atmosphere.


The best way to eat meat

The meat is cooked at a sufficient distance from the flame, allowing it to cook more slowly when cut into thick slices or whole animals. In this way, the meat retains all its softness.
