Molitor Paris unveils its Jardin d'Hiver: a bright, green brasserie for autumn 2025

Summer's over and the rooftop season is slowly drawing to a close. As the first cool breezes arrive, it's time to return indoors. At Molitor, the rooftop terrace gives way to indoor dining. But this year, autumn also marks a change of identity, both in terms of decoration and food. The urban brasserie gives way to the Jardin d'Hiver. in the style of a botanical greenhouse, inspired by the nearby Auteuil greenhouses, the space is bright and generously decorated with a variety of plants. The backdrop is the hotel's mythical swimming pool (only accessible to hotel guests!).
Plants as a common thread in the kitchen
Under the direction of chef Tony Goncalves, the menu is now more plant-based, even if, let's face it, it still gives pride of place to meat and seafood products. However, the menu is shorter and based on seasonal produce.
This autumn, the menu features a surprising celeriac carpaccio, the traditional beef tartare "spiced up" with tagetes with tagetes, as well as a vegetable pithivier with horseradish sauce, which reinforces the chef's positioning towards a more vegetable-based cuisine. Desserts are the work of pastry chef Camilla D'Ambrosio. Tarte aux figues, chou croquant à la pistache and apple pie au caramel de beurre salé are elegant and decadent.

Finally, in the center of the restaurant, the bar is also in tune with plants, with a menu of floral cocktails, fresh herbs, citrus fruits and spices created by the establishment's mixologists.
A new positioning in tune with the times, as pleasing to the palate as it is to the planet.
