From Paris to Metz, via Nantes and Giverny, here are 15 of the most eagerly awaited restaurants at the start of 2024. There's something for everyone, from Japanese bistros to gourmet restaurants.

They are chefs in Paris, Nantes, Nancy and Giverny, and are preparing to embark on a new adventure in 2024. David Gallienne, Sarah Mainguy and Thibault Sombardier, to name but a few, will be opening a restaurant in the coming weeks or months, much to the delight of gourmets. Here is a non-exhaustive list of the most eagerly-awaited restaurants for the start of 2024.

Sarah Mainguy's Freia, Nantes

Sarah Mainguy has come a long way since her appearance on season 12 of Top Chef. After Vacarme, the young chef, consecrated Jeune Talent Gault&Millau in 2022, will open a second restaurant in Nantes, Freia, in February, where she will offer gourmet cuisine focusing mainly on plants, in a bucolic setting.

Jean Covillaut's Court-Bouillon, Paris

From February 12 to March 31, 2024, Jean Covillaut, discovered in Top Chef 2023, will open an ephemeral table. At Court-Bouillon, he'll be serving classic French cuisine, revisited "à sa sauce", and providing the service himself.

JU - Julien Allano's Maison de Cuisine, Bonnieux

In spring 2024, Julien Allano will open his first restaurant, JU-Maison de Cuisine, in Bonnieux in the Luberon. Housed in a beautiful dry-stone building, the chef will offer eco-responsible cuisine as well as a unique customer experience, thanks in particular to a troglodyte wine and cheese cellar.

Mojju by Thibault Sombardier, Paris

Thibault Sombardier is sometimes where you least expect him. From February 2024, this Parisian bistro specialist will embark on a new adventure with Mojju, an address paying tribute to Korean culinary culture. The chef's plates will blend the two cultures, with typical dishes twisted by modern touches of French cuisine.

Charles Coulombeau's Centre Pompidou-Metz restaurant in Metz

Charles Coulombeau, already head of La Maison dans le Parc in Nancy, will open two restaurants at the Centre Pompidou-Metz in June 2024: at lunchtime, a large brasserie area with traditional French dishes revisited with a Japanese twist, while at dinner, a gourmet table with around twenty covers will offer an upscale menu inspired by Japanese flavors.

Cheval Blanc's Japanese restaurant, led by Takuya Watanabe, in Paris

After Plénitude, Tout Paris and Langosteria, Cheval Blanc Paris will soon open its new Japanese restaurant, in place of Limbar. At the helm, in partnership with Arnaud Donckele and Maxime Frédéric, will be Japanese sushi master Takuya Watanabe, founder of Jin Paris (2 Gault&Millau toques).

Pulpe by Clémence Taillandier and Philippe Platel, Lille

Clémence Taillandier, a 26-year-old chef who has worked at L'Astrance, Quinsou and, more recently, Rozo in Lille, and Philippe Platel, formerly of Le Taillevent, David Toutain and also Rozo, have joined forces to open Pulpe. This modern, relaxed-style bistro will open in March in Vieux Lille and already promises to become a must-visit address.

Altro Frenchie by Greg Marchand, Paris

If street food fans said goodbye to FTG in 2021, they can now rejoice. Greg Marchand is replacing his old concept with Altro Frenchie, a new address where the chef will let his love of Italian cuisine shine through. As usual, the owner of Frenchie will offer his own vision of transalpine gastronomy, with a large share attributed to vegetal and dishes from cucina povera ("poor cuisine").

Oscar by David Gallienne, in Giverny

David Gallienne, chef at the Jardin des Plumes in Giverny, is embarking on a major project: to open a new restaurant in the heart of the Musée des impressionnistes. The address will open in spring 2024... To be continued.

Brion by Geoffrey Lengagne, Paris

Trained by Mathieu Viannay in Lyon, Pierre Gagnaire and Thomas Keller in New York, Geoffrey Lengagne is going solo, opening his first Paris restaurant in January 2024. We can't wait to find out more!

Hanabi and its menu by The Social Food, Paris

Shirley Garrier and Mathieu Zouhairi, a.k.a. The Social Food, have a major challenge ahead of them this January 2024. The duo, well known for delighting their followers on social networks with their perfect culinary styling, are about to sign the menu of Hanabi, a Japanese restaurant set up within the new Hana hotel in Paris. On the menu: traditional bistro cuisine blended with Japanese gastronomy, as well as a fine cocktail and sake menu.

Sienne by Baptiste Renouard, in Saint-Cloud

Five years after opening his Ochre restaurant in Rueil-Malmaison, Baptiste Renouard will inaugurate Sienne, a bistronomic restaurant in Saint-Cloud, in mid-February. From breakfast to dinner, including lunch, snacks, aperitifs and Sunday brunch, the chef will offer bourgeois cuisine with a modern twist.

LAVA by Wilfried Romain and Rémi Badjoint, Paris

Wilfried Romain, a young talent unveiled on Top Chef, is teaming up with sommelier Rémi Badjoint to open LAVA in place of Louis Vins. From February onwards, they'll be offering bistronomic cuisine with travel influences, embellished with souvenirs gathered from the four corners of the globe.

L'Envol by Thibaut Spiwack, Paris

Thibaut Spiwack has designed the menu for L'Envol, the future restaurant of the Philharmonie de Paris. With his chef accomplice Sarah Ledu, he'll be promoting plant-based, local and seasonal produce... A lovely score to be discovered at the end of January 2024.
