Ritz pastry chef François Perret to leave Place Vendôme after summer

It was in a joint press release and on the chef's Instagram account that the big announcement was made: François Perret will be leaving the Ritz at the end of August 2025.

Having arrived at the Parisian palace in 2015, the pastry chef has successfully reinvented the sweet image of the Ritz Paris. He had made a name for himself in particular for his original, gourmet creations with a totally recognizable style. But today, François Perret and the palace are parting ways.

The end of a collaboration

On an Instagram post featuring his creations, the pastry chef announces his departure: "After ten years with the Ritz Paris, it's time for me to turn a page. François Perret will be leaving the palace at the end of August 2025.

The General Manager of the Ritz Paris, Laurent Herschbach, is also full of praise for the pastry chef: "I would like to warmly thank François Perret for his unfailing commitment to the Ritz Paris, his creativity and his passion over the last 10 years. Thanks to him, our patisserie has enjoyed unrivalled success and has established itself as one of the finest in the world."

One-of-a-kind creations

Throughout his time at the Ritz, François Perret has breathed modernity and elegance into the palace's pastry creations. Renowned for his playful, sensory pastries, the chef has devised a number of sweets that have delighted all who have tasted them. His marbled entremets and his famous "Ritz au lait" are still on everyone's lips, thanks to their refinement and originality.

This collaboration didn't stop at the walls of the Ritz, as two Le Comptoir boutiques opened their doors in 2021, including one in May 2025. These offer sandwiches, viennoiseries and Le Comptoir's famous flavored madeleines.

François Perret's replacement has not yet been announced, nor have the pastry chef's future plans.
