Classic French pastry reinvents itself in Paris. From November 12, 2025, Jessica Préalpato, a chef renowned for her sustainable and creative approach, opens her Chouroom at the prestigious San Régis Hotel (Paris 8ᵉ). Here, snacking becomes a singular moment, where each chou is thought of as a complete taste experience, respectful of the seasons and raw materials.

Natural patisserie

Dsc 6206From the outset, Jessica Préalpato has been exploring a more natural approach to pastry-making, where ancient flours replace refined whites, sugar is carefully measured out and plants and seeds enhance the raw ingredients. This philosophy has guided his work for years, and now finds a new setting in this elegant place, open to the Parisian light and bathed in a hushed atmosphere.

On the Chouroom menu, three original variations transform cabbage into a modern, refined dessert. Buckwheat cabbage combines cabbage dough, roasted and lightly salted buckwheat, cracker, praline and buckwheat custard. The crunchy, fragrant pumpkin seed cabbage combines puffed seeds, cracker, praline and pumpkin seed custard, while the sunflower seed cabbage plays on the toasted sweetness of the Ferme des 3 Rois sunflower, with the same combination of textures and praline. Each bite offers a perfect balance between gourmandise and lightness, while highlighting the natural flavors of the ingredients.

These creations, available only on click & collect or to order, allow you to prolong the pleasure at home. Le Chouroom illustrates Jessica Préalpato's obsession: to create responsible, elegant and surprising desserts, where haute pâtisserie meets natural taste.

Le Chouroom opens Tuesday to Friday from 11:30 a.m. to 7:30 p.m. and Saturday from 2:30 p.m. to 6:30 p.m. An address to reserve for all pastry lovers who want to taste the reinvention of a French classic, signed by one of today's most inventive chefs.
