Hugues Pouget: his first eponymous address to open at the end of the year
In November 2025, Hugues Pouget opened his first eponymous boutique in Paris, on rue du Cherche-Midi, designed as an invitation into his playful, gourmet world.
This is the latest project from the former French Dessert Champion: the opening of a first address in his name at 50 rue du Cherche-Midi, in the 6ᵉ arrondissement of Paris. Does the address sound familiar? No wonder: the pastry chef will be taking up residence not far from Le Bon Marché.
Fifteen years after the creation of Hugo & Victor, Hugues Pouget imagines a new setting. Light wood, sleek design, mosaic floors... A veritable temple to gourmet delights imagined by the Yann Montfort agency, the place reinvents the codes of Parisian bistros with a touch of contemporary elegance.

The start of a whole new chapter, due to open in mid-November
More than just a pastry shop, Hugues Pouget unveils a revisited range of savoury and sweet dishes. Mille-feuilles, tarte au citron and flan pâtissier are revisited, in a more personal interpretation. The financiers and cakes for which the chef is renowned will be joined by a new addition: tigrés. Finally, a limited-edition market pastry, inspired by seasonal produce, will be offered every month.
At lunchtime, shoppers can enjoy a snack menu featuring brioche and savoury pastries. Perfect for a gourmet lunch break.
Finally, the range of chocolates, so dear to the house, has been reinvented with a brand new proposition that we can't wait to discover.
With this launch, Hugues Pouget is returning to his roots, while giving new impetus to his passion: " This project is a way of getting back to the very essence of my profession: creating emotions through my pastries, and fully assuming my personal signature. I wanted a total renewal in the vision of my work. "
And the entrepreneur has no intention of stopping there. his long-term ambition is to develop his brand internationally, with a view to spreading his playful vision of patisserie far and wide.
