A French chef in a Swiss kitchen
Originally from France and born near Belfort, Jérémy Desbraux has long since established himself on the Swiss culinary scene. While his cuisine remains attached to the great references of France - he readily cites Bocuse or the Troisgros brothers - he explains that the Jura region plays an important role in his recipes.
The chef tells Gault&Millau Suisse: "What I put on the menu is increasingly influenced by the Jura. I love seafood, for example, but I hardly ever serve it anymore, as it doesn't really belong to our terroir." The chef now favors local ingredients, highlighting the richness and identity of the Noirmont and Jura terroir in which he operates.
