Jeunes Talents Sud-Ouest 2023 grant
The Dotation Jeunes Talents Gault&Millau (DJT) rewards the bold who set out to create a restaurant. Gault&Millau detects and unearths those who have the potential and audacity to take the plunge. Focus on the DJT Sud-Ouest, which took place on Monday December 11 at the Vatel hotel school in Bordeaux.
Anthony Chevallier & Stéphane Leick, L'Endroit, Toulouse (opening early 2024)
Anthony's bistronomic project: a young chef with an excellent track record in one of Toulouse's liveliest neighborhoods, assisted by his accomplice Stéphane, a talented maître d'hôtel and sommelier.
Julien & Magalie Hermida, Cercle, Corneilla-del-Vercol (opening early 2024)
Julien and Magalie's revenge: after losing their restaurant, cited in the 109 last year, in a fire, they took up the challenge of a new adventure in the Catalan countryside, crowned by the Gault&Millau Endowment.
Nicolas Laval & Amandine Renault, Moon, Brive-la-Gaillarde (opening early 2024)
Trained at Ferrandi and then in some of the finest Parisian establishments, Nicolas the Briviste returns to his home town to take over, with his partner Amandine, a well-known address which they will rebrand and modernize with the opening of Moon in February.
