La Dotation Jeunes Talents Gault&Millau (DJT) récompense les audacieux qui se lancent dans la création d’un restaurant. Gault&Millau détecte et déniche ceux qui possèdent le potentiel et l’audace d’entreprendre. Zoom sur la DJT Sud-Ouest qui s’est déroulé le lundi 11 décembre à l'école hôtelière Vatel de Bordeaux.

Le projet bistronomique d’Anthony : un jeune chef au très beau parcours dans l’un des quartiers les plus animés de Toulouse, avec l’assistance de son complice Stéphane, maître d’hôtel et sommelier de talent.

Julien & Magalie Hermida, Cercle, à Corneilla-del-Vercol (ouverture début 2024)

La revanche de Julien et Magalie : après avoir perdu leur restaurant, cité dans le 109 l’an passé, dans un incendie, ils relèvent le challenge d’une nouvelle aventure en Pays catalan, couronnée par la Dotation Gault&Millau.

Nicolas Laval & Amandine Renault, Moon, à Brive-la-Gaillarde (ouverture début 2024)

Formé chez Ferrandi puis dans quelques belles maisons parisiennes, Nicolas le Briviste retrouve sa ville natale pour reprendre, avec sa compagne Amandine, une adresse réputée qu’il vont rebaptiser et moderniser en ouvrant Moon dès le mois de février.
