At this bar in the South, the menu changes every day
At the Port of Nice, the Vibes bar reinvents its menu every day, drawing from a bible of 1,500 cocktails. We sat down with its three founders, who previously worked at the London Edition.
At the Port of Nice, Vibes Bar has just celebrated its first anniversary. A popular spot on the French Riviera, this venue is one of a kind, and its menu is anything but ordinary. Housed in a former 1960s garage with retro decor, the bar doesn’t have a permanent menu: its 14 cocktails are updated daily, selected from a digital “bible” of 1,500 recipes.
From London to the French Riviera
The three owners—Manon Vieules, Yoann Tarditi, and Bryan Gaillard—met at the London Edition, a renowned venue in the British capital. After working in several major cities, they set their sights on the French Riviera—the hometown of mixologist Yoann Tarditi—with the goal of opening a neighborhood bar “using local resources and fresh, regional ingredients, ” they explain.
Every early afternoon, the friends get together to put together the daily menu, drawing from their digital bible: 1,500 recipes sourced from renowned books, menus from popular spots, and notes taken during their professional experiences, such as their time at Milk & Honey in London.

A Seasonal Menu
The menu is crafted based on ingredients sourced that very morning at the MIN, Nice’s wholesale market. Figs, peaches, strawberries, lemons, blood oranges… the fruits are local whenever possible. The establishment’s mantra: reimagining classic cocktails with fresh ingredients and juices squeezed to order. “We’re practically chemists!” smiles the mixologist. On the menu: the Maurescolada (Ricard, amaretto, coconut and pineapple sorbet) or the Vibes Spritz (St-Germain, Suze, passion fruit, prosecco, and soda). The bar makes it a point of honor to offer vintage spirits like Suze, Calvados, and Chartreuse every day.
A “good vibes” spot
Accessible to everyone, the menu is easy to navigate, and you can always order a classic cocktail. Another specialty to enjoy on the go: the croque nissart, which reimagines the traditional Niçoise stew between two slices of bread, as a nod to the London-style grilled cheese. A year after opening, the bar welcomes both locals and international guests, thanks to word of mouth.
