After a successful career in Paris, chef Anthony Denon opens his first restaurant in Toulon. A family and gastronomic adventure that promises to redefine luxury and emotion at the table in the Var.

"We wanted to create an address that reflects who we are." On November 24, 2025, Anthony Denon will take the next step by opening his first restaurant in Toulon, Var. A 35-seat gourmet restaurant where contemporary cuisine meets refined luxury, emotion and local produce.

A family team

Six months after leaving his life in Paris, Anthony Denon, ex-chef of theHôtel le Burgundy, chose Toulon to put down his pots and pans. "The Var is a perfect region for it. Toulon is booming, so it's very interesting to combine all that," he explains. The idea is clear: to create an iconic address, where every detail reflects the DNA of the chef and his family team. His wife, the company's general manager, is accompanying him on this adventure to ensure consistency and fluidity in the management of the restaurant.

The warm, contemporary dining room features stone tones on the walls, touches of wood and soft lighting. "We don't want people to feel stressed about coming to a gourmet restaurant," stresses Anthony Denon.

The menu, resolutely contemporary and responsible, will mix classics and original creations. Some of the chef's signature dishes, such as artichokes and poultry, will remain on the menu, while new recipes will highlight local and seasonal produce. "The aim is to provoke something in every bite, so that people have a memory of each dish and experience some emotion," he insists.

This opening also marks an evolution in the way luxury dining is conceived. Anthony Denon wants to offer a vision that is uncluttered, healthy and accessible, where refinement can be seen in every detail, from the kitchen to the decor. In this phase of finishing work, the intensity is palpable: the chef and his team are fine-tuning the final details before launching this new culinary adventure in the Var.
