Mauro Colagreco, chef at the Mirazur (18.5/20 4 T) in Menton, has been offering alcohol-free creations since 2023. The fruit of extensive research, each cuvée offers a different journey and pairing. A sparkling drink, Eterna II is based on yerba maté, verbena and elderflower. With its floral and citrus notes, the bubbles are frothy and dense, but the whole remains fresh and light, like a springtime atmosphere. This cuvée can be enjoyed as an aperitif or with trout meunière.

Sang Hoon Degeimbre, chef at Belgium's L'Air du Temps restaurant (19/20, 5 toques), creates high-quality botanical macerations. This one, based on purple shiso and basil, first flatters the eye with its intense pink color. It then bewitches us with its purity and elegance on the palate.
