Gault&Millau's review 2025

Perched on the heights of Bouliac, 15 minutes from Bordeaux, Le Saint James is a work of architecture designed by Jean Nouvel, with taut lines, corten facades and a play of transparency that blends into the surrounding vineyards. Inside, the 18 minimalist rooms all open onto the Garonne valley, bathed in light that changes with the day. At the table, chef Mathieu Martin offers an inventive score, all the glory of Bordeaux terroir, played out in an open kitchen. The address also conceals an overhanging swimming pool, a vegetable garden, some contemporary sculptures and even a cookery school. A precious retreat, overlooking the Garonne valley and Bordeaux, between design, terroir and silence.
