Gault&Millau's review 2025

Perched on the heights of Bouliac, Le Saint James is a work of art conceived by Jean Nouvel, all taut lines and corten facades, a raw and poetic architecture in dialogue with the surrounding vineyards. Inside, 18 rooms with the feel of contemporary refuges, open onto the Garonne valley and bathed in exceptional light. At the table, chef Mathieu Martin offers an inventive menu, all the glory of Bordeaux terroir, prepared in the open kitchen of the gastronomic restaurant. The address also conceals an overhanging swimming pool, a vegetable garden, some contemporary sculptures and even a cookery school. A precious retreat overlooking the Garonne valley and Bordeaux, between design, terroir and silence.
