Gault&Millau's review 2026

Set at the foot of one of France's most beautiful villages, this character-filled residence is a tribute to the wild landscape of the Cantal mountains. Combining volcanic stone with modern architectural lines, the 4-star hotel blends into the landscape like a natural extension of the rock. The suites, veritable lookouts over the Doire valley, feature earthy tones and organic textures - boiled wool, light wood, raw leather - inviting contemplation. Every detail celebrates the terroir, from the furniture designed by local craftsmen to the spa, whose bay windows open onto the surrounding pastures. At nightfall, the Puy Tilleul gourmet table becomes the stage for a cuisine of the senses, where the chef sublimates the flavors of Auvergne.
